Unripe papaya
2 teaspoon minced ginger root
2 teaspoon sliced garlic
200 gm jaggery
a pinch of red chilli powder
1 teaspoon salt
4 tablespoon tamarind juice
1 teaspoon garam masala
Water, as required

Methods:
· Wash and peel the unripe papaya;
cut into thin slices.
·
Put the papaya slices, ginger and
garlic with water in a vessel.
·
Bring the water to a boil, over
medium flame.
·
Add the jaggery, salt and a bit of
chilli powder.
· Bring it to a boil over medium
heat and then add jaggery, salt and a pinch of red chilli powder and continue
cooking for about 5 minutes.
·
Stir in the garam masala and the
tamarind juice. Mix thoroughly.
·
Cook for 10 more minutes, or till
the desired consistency is achieved.
· Once the chutney thickens, remove
the pan from heat and let it cool.
