Cajun Potatoes

 Ingredients:

 

Baby boiled Potatos

2 tsp Corn Flour

1 tsp All Purpose Flour (Maida)

Oil for fry

Water as require for slurry

2 tsp Mayonnaises

1 tsp Heavy Cream

2 tsp Cajon Spices

1 tsp Chopped Garlic

1 tsp Paprika Powder

½ tsp Black Pepper

Lemon Juice

Coriander

 


Methods:

 

·          Boiled the potatoes with 2 tsp salt. (Never over-cook the potatoes)

·          After cooking drain the water from potatoes.

·    Then smash each potatoes gently using a potato masher. (Do not over smash the potatoes else they will break while frying.)

·        Heat oil for frying pan over high heat.

·        When oil became hot, add a few smashed potatoes to the frying pan and fry until lightly fried over 10-12 minutes.

·         Drain potatoes on a dish. Deep fry all the potatoes in the same method.

·        Now heat the oil once again on high heat and when it is very hot, fry the potatoes a second time, until they became well brown and crispy.

·        Again drain on a Serving Plate and soak excess oil with paper towels.

·       Now prepare the Cajun Sauce and mix chopped Garlic, 2 tsp mayonnaise, 4 tablespoon heavy cream, 2 tsp Cajun spice seasoning, ¼ teaspoon Paprika Powder, and ¼ teaspoon Black Pepper Powder, Salt and Lemon Juice in a small mixing bowl and whisk well.

·          If needed add little water as requirement.

·          Then put the Cajun Sauce on Served Fried Potatoes.

·          Garnish with chopped Coriander.

·          And Serve the dish.
